The milk is collected and handled with care before beginning its transformation through the traditional Bilona process.

Gently Warmed for the Next Stage

Before the milk is transformed into curd, it is gently warmed to prepare it for the traditional curd-setting process.

This carefully handled step helps create the right foundation for the curd that will later be traditionally churned to obtain fresh makkhan.

Milk Becomes Curd

The fresh milk is traditionally set into curd before the churning process begins.

This step is an important part of the traditional Bilona method and sets the foundation for transforming milk into makkhan and, eventually, ghee.

The curd is traditionally churned to separate makkhan (butter) from buttermilk.
